A passion for cooking, a commitment to providing seasonal variety in all his menus, and making sure residents are happy is what drives Mario Da Silva Reis, Head Chef for St Peter's Residential Aged Care.
Mario, pictured with his team, has been working at St Peter’s in Lane Cove for almost eight years following a 40-plus career as a chef for restaurants and hospitality agencies across Australia.
Mario brings a lifetime of experience to St Peter’s, which is handy when he is responsible for producing over 200 meals a day for 93 residents, catering for a wide variety of tastes and dietary requirements.
“My focus is on making sure the residents are happy and satisfied,” says Mario.
“I’m always seeking their feedback on what meals they like and what they would prefer not to have. Each season the menu is updated to reflect available produce and residential favourites. At the moment, the favourites from our Winter menu include chicken stroganoff, crumbed fish, and maple glazed pork.
“Food is such an important part of our lives. In aged care, it takes on particular importance for not only the nutrition it provides, but the positive impact it has on the mood and wellbeing of residents. For many, food is the highlight of their day and this is celebrated at St Peter’s.”
Originally from Portgual, Mario arrived in Australia as a fresh-faced 15 year old, when he started work as an apprentice chef. Now aged 67, Mario has no plans for retirement just yet.
“As long as I am healthy and able to work I will. I have been working for so long it’s what I know. I also enjoy making a real difference in the lives of the residents, making them happy makes me happy.”
